Fattori Soave, “Danieli”

To achieve the remarkably fresh, mineral driven style of this Soave, Antonio Fattori planted the vineyard at high elevation, where volcanic soils, wind and cooling temperatures enhance the grape’s natural acidity. In the cellar, Fattori parlays techniques he learned in New Zealand and Dijon. In a blind tasting with other leading Soaves, our panel described Danieli as having a reserve-like quality, with structure, mineral finish and balance that stood out it in the group.

Varietals: 85% Garganega, 15% Trebbiano

Vineyard: In the “Ronca’ - Monte Calvarina” UGA on the Mount Calvarina; volcanic, basalt soils

Farming: Organic

Vinification: Fermentation maturation in stainless steel; native yeasts

Aging: 6 months on lees in stainless steel
