Mathieu Cosme Vouvray Brut, “Fines Bulles”

At the highest point of Domaine de Beaumont is a plateau dominated by “silex” soil, a mixture of flint and sand known to produce the more prestigious wines in the Loire. Mathieu uses the méthode Champenois in the production of Les Fines Bulles with the second fermentation occurring naturally in bottle—with native yeast and no sugar added. The bottles are further aged for 36 months before disgorgement.
