Philip Togni Cabernet Sauvignon, Tanbark Hill

Philip Togni’s Tanbark Hill Cabernet Sauvignon offers a moderately priced introduction to the Togni style. Unlike the traditional model of a “second wine”, Tanbark Hill is always a smaller release than the Philip Togni Cabernet. All fruit is farmed from the Spring Mountain estate and is vinified in the same method as the “main label”. The Tanbark Hill vineyard is a small section of the estate cascading down the hill. Because the exposure is significantly different than the main vineyard it ripens later and is designated from the beginning to go into the separate label. The wine is augmented with a selection of lots from the main wine in the classic tradition of a second wine.

Farming: Organic

Vinification: Stainless steel fermentation with regular pump-overs, gravity fed into barrel, minimal racking

Aging: 20 months in barrel, 40% new French oak (Nevers), unfiltered, unfined

Vineyard: Tanbark Hill vineyard on Togni's estate
