Acid, Rocks!

Thanks to open-minded Millennials, wine drinkers are apt to try new things, opening up a huge opportunity for great wines to break through.

Gone is the hierarchical, elite presentation, akin to making consumers stand behind the velvet rope waiting to be waived in to the inner circle. "In" are wines that seem fun, eco-friendly and approachable.

Hence, the "rocks and acid" meme is creating an opportunity to explore mineral-driven whites, particularly those that are eco-friendly, fun and merit their price. When given such a chance to impress, why not pick a wine that really overdelivers?

You'd do well by recommending Mathieu Cosme Vouvray, "Les Promenards". This bone-dry Vouvray is not just superb quality that wine "connoisseurs" will clearly recognize, it nails the "acid, rocks" descriptor, with a youthful and eco friendly image that is easy to love.

With the 2020 vintage, Cosme has attained a new level of edgy, flinty appeal in the style of Philippe Foreau--for a fraction of the price.

While Mathieu Cosme's approach to making wine--biodynamics, neutral aging--may be "on trend," he came to this philosophy after learning from the best. Cosme schooled with the Loire's natural milieu at Lycée Viticole d’Amboise (including learning vine cultivation from Christian Chaussard, the leading proponent of natural wine who coined the term “pet nat”) followed by a choice apprenticeship with Noel Pingus at Domaine Huet.

When he took charge of his family's estate in 2005, he dedicated himself to make transparent wines using organic and biodynamic farming.

Mathieu Cosme's vineyards are located in the SE section of Vouvray, in the first and second ‘cote’ in from the river on varying soils of Silex and clay over the omnipresent base of tuffeau limestone. Les Promenades comes from a 50 year old vineyard planted by Mathieu’s grandfather.

Perhaps surprisingly for a winemaker coming from Huet—a producer famed for their rounded rich style of Chenin, Mathieu Cosme's "Les Promenards" is very dry and racy, focusing on the bracing acidity from Chenin Blanc and emphasizing the intense minerality from the vineyards so close to the river. Farming with horse and plough, vinifying with native yeasts and aging in stainless steel, delivers a wine of incredible transparency.

Like you'd expect from top Chenin Blanc wines, Mathieu Cosme "Les Promenards" is fascinating to watch evolve in the glass. Give it a vigorous splash decant and serve it in large Chardonnay glasses.

It also has a wide range of pairing options. You can serve it with foods ranging from oysters to roast chicken and many difficult to pair vegetable dishes.

And for a wine that rivals the quality of elite names, people will be surprised that it's such a great value.
